Would you have expected me to carve anything else out of my pumpkin?! And don't worry. All of the kids that told me how cool my pumpkin was, received more candy!
No Halloween cupcakes this year though.

Apple-Cream Cheese Bundt Cake
So for Rosh Hashanah this year, my duty was to make dessert and my grandma's broccoli casserole. I had search the web through my trusty sources and came across this recipe for an Apple-Cream Cheese Bundt Cake and I have to say, it turned out wonderful! Just one tip though, make sure you cut the apple into small cubes for this recipe. The apples tend to get lost if they are too finely chopped.

CREAM CHEESE FILLING:
1 (8-oz.) package cream cheese, softened
1/4 cup butter, softened
1/2 cup granulated sugar
1 large egg
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
APPLE CAKE BATTER:
1 cup finely chopped pecans
3 cups all-purpose flour
1 cup granulated sugar
1 cup firmly packed light brown sugar
2 teaspoons ground cinnamon
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground nutmeg
1/2 teaspoon ground allspice
3 large eggs, lightly beaten
3/4 cup canola oil
3/4 cup applesauce
1 teaspoon vanilla extract
3 cups peeled and finely chopped Gala apples (about 1 1/2 lb.)
PRALINE FROSTING:
1/2 cup firmly packed light brown sugar
1/4 cup butter
3 tablespoons milk
1 teaspoon vanilla extract
1 cup powdered sugar
1. Prepare Filling: Beat first 3 ingredients at medium speed with an electric mixer until blended and smooth. Add egg, flour, and vanilla; beat just until blended.
2. Prepare Batter: Preheat oven to 350º. Bake pecans in a shallow pan 8 to 10 minutes or until toasted and fragrant, stirring halfway through. Stir together 3 cups flour and next 7 ingredients in a large bowl; stir in eggs and next 3 ingredients, stirring just until dry ingredients are moistened. Stir in apples and pecans.
3. Spoon two-thirds of apple mixture into a greased and floured 14-cup Bundt pan. Spoon Cream Cheese Filling over apple mixture, leaving a 1-inch border around edges of pan. Swirl filling through apple mixture using a paring knife. Spoon remaining apple mixture over Cream Cheese Filling.
4. Bake at 350º for 1 hour to 1 hour and 15 minutes or until a long wooden pick inserted in center comes out clean. Cool cake in pan on a wire rack 15 minutes; remove from pan to wire rack, and cool completely (about 2 hours).
5. Prepare Frosting: Bring 1/2 cup brown sugar, 1/4 cup butter, and 3 Tbsp. milk to a boil in a 2-qt. saucepan over medium heat, whisking constantly; boil 1 minute, whisking constantly. Remove from heat; stir in vanilla. Gradually whisk in powdered sugar until smooth; stir gently 3 to 5 minutes or until mixture begins to cool and thickens slightly. Pour immediately over cooled cake.

Amber is my little sister in sorority. If my parents had another girl after me, Amber would be exactly what I'd expect of a little sister. Her bridal shower was yesterday. Her wedding colors are hot pink and navy. So I put together cupcakes to go with those themes.

4th Annual Hokie Spirit Memorial Golf Tournament
My best friend has organized a golf tournament for the last 4 years to benefit the VTV Family Outreach Foundation. Her sister-in-law was one of the survivors of the shooting. She was able to raise $16,000 this year!! Since I can't hit a golf ball, at least I could help out in what I know how to do!
So I volunteered this year to bake 300 cupcakes for the event.

Mother's Day 2011
So I've been asked a few times recently if I do cakes. I haven't really worked with fondant except to make decorations for my cupcakes. So who else to test out my fondant making skills then on my mom?!
I made a chocolate cake with chocolate frosting and put a layer of strawberries inside. I don't suggest doing putting strawberries inside a cake. Bad idea. The cakes get too slippery and don't stay still!
Here's my first fondant covering job. Not too bad.
Final product.

Race for the Cure bake sale. finale!
So our bake sale...
I thought we'd have a lot more traffic. But we still had fun. And raised over $238.00.
I took more of the leftovers to work that week. Let me tell you, that's the way to do it. Just leave it in the kitchen with a jar that says "Donations for Race for the Cure."

Easter cookies and cupcakes
I'm not the best at cookies. Sometimes, I just don't have the patience. I don't know how those crazy cookie decorating people do it all of the time! Y'all are crazy! But I made these for Jason's co-worker.
